Does iKnowMyMac delete files?

No. The Storage map moves only the items you pick to the Trash, after a confirmation that lists every one. You empty the Trash yourself.

Why does the Storage map need Full Disk Access?

macOS hides the size of some folders unless you allow it. iKnowMyMac asks the first time you open the Storage map, and the rest of the app works without it.
